Personally, I think if you are new to lighting, it is important to start out with single-light setups first. Multi-light setups certainly offer a wide variety of creative potential and versatility, but when you are newer to artificial lighting, it is important to build an intuitive grasp of things like falloff, relative size, subject-to-source distance, and more, and using one light makes it easier to see how these things work. On top of that, as you can see in the video, you can accomplish quite a lot with just a single light, and you can certainly get professional results.
