The a7S III is very much meant to be used only for video work; that does not mean you can’t use it to take stills photos, as you certainly can, but with just 12 megapixels of resolution, many creatives might find it a bit too limited. On the other hand, with a 45-megapixel sensor, the EOS R5 positions itself as a versatile hybrid camera that can handle both photo and video work competently.
